Aloo Gobi (Potatoes and Cauliflower Florets Cooked in Spices and Tomato Gravy) – Indian Vegan Recipe
The recipe below is for a very
popular dish across India called Aloo Gobi. Aloo is the Hindi word for potatoes
and Gobi is the Hindi word for cauliflower. In this recipe, they are cooked and
combined with spices and a delicious tomato gravy. The dish can be served hot

INGREDIENTS
· Chopped Potatoes – 2
large
· Cauliflower – 2 cups
· Tomatoes – 2 medium
sized
· Garlic Cloves – 4-5
· Ginger – 1 inch piece
· Green Chillies – 2-3
· Chopped Onion – 1
· Cumin Seeds – 1
tablespoon
· Turmeric Powder – 1
teaspoon
· Red Chilli Powder – ½
teaspoon
· Coriander Powder – ½
teaspoon
· Cumin Powder – ½
teaspoon
· Black Pepper – ¼
teaspoon
· Green Pepper – 1
· Green Peas – Handful
· Coriander Leaves – ½
cup
· Bay Leaf – 1
· Oil – 5 tablespoons
· Salt to taste
· Lemon Juice – 1 tablespoon
METHOD
1) Add oil to a hot pan
and leave for about 90 seconds. Then, add the cumin seeds and bay leaf to the
oil and leave for 10 seconds.
2) Next, add the potatoes
chopped into medium sized cubes along with the cauliflower florets. Sautee for
6-8 minutes.
3) Add finely chopped
ginger, garlic and green chillies along with one chopped onion.
4) Add the turmeric
powder, red chilli powder, cumin powder, black pepper and the coriander powder
to the pan and mix well till the onions soften; about 3-4 minutes.
5) Once the onions are
cooked, add the finely chopped tomatoes and stir in approximately one cup of
water.
6) Mix well, add a chopped
green pepper and green peas and let the mixture cook for about 6-8 minutes.
Adjust the salt in the dish as per taste.
7) Switch off the
hob/stove, add the lemon juice and garnish with fresh coriander leaves.
8) Serve hot with steamed rice or
rotis.
